Brooklyn Pad Thai

I’ve had my eye on Brooklyn Pad Thai from Vegan with a Vengeance ever since I first bought the book…I just never got around to making it. I don’t usually have bean sprouts in the house, truth be told. However, after the spring rolls I previously posted about, I had some left over that needed to be used up quickly. So I took advantage of this delicious pad thai opportunity.

It was pretty good. I added the peanuts on top of my dish after it was done cooking, so the bf could have some as well. The sauce is delicious…I added some extra sriracha to mine, but that’s because I have an addiction to the stuff.

Wow..I’ve really been on a VWAV kick lately haven’t I?

On another note, I’m getting quite fed up with taking crummy photos because there is no light at dinner time anymore. It’s usually pitch dark by the time I get home. Boo. So I’m thinking of building a lightbox. I have a cardboard box and some tissue paper sitting around, so maybe that will be my weekend project.

Curried Udon Noodle Stir-Fry

If you own Veganomicon, RUN, don’t walk, to make curried udon noodle stir-fry. Best stir-fry ever. Hands down. Both me and the bf couldn’t stop raving about it as we were eating. That’s what our dinner conversation sounded like: “Isn’t this amazing??” “Oh wow, this is so good!” “I can’t get over this!” etc.

Excuse the cruddy photo…it’s raining and cloudy outside and I had to use the stove’s overhead light.

I did make a few changes. I used tofu instead of seitan. I fried the tofu in a bit of oil first, then drained it on paper towel. I didn’t have veggie broth on hand, so I just used water in the curry sauce and it seemed to work out just fine. I also added a sprinkling of sesame seeds. Because everything tastes better with a sprinkling of sesame seeds. I think next time I would add 1/4 tsp. of red pepper flakes. Just something to give it a bit of a kick. But we’re spice lovers.

Sushi for One

The bf is still away, so last night for dinner I made veggie sushi for myself. It was supposed to be a serving for one, but I made three rolls. And devoured them all. Meh.

First up, the spicy tempeh nori roll from Veganomicon. I left out the avocado, seeing as how avocado makes me ill and all. In lieu of a green onion (which I did not have) I used some fresh chives from our herb garden. I really need to start making this filling for sandwiches, I love it so.

I also made an aspargus roll. I lightly steamed the asparagus before rolling it, because I really don’t like asparagus that’s too crunchy.

Last but not least, kappa maki, or cucumber roll. This was my last sheet of nori and it was badly torn, so I did the best rolling job I could do. Hence why it looks a little odd.

General Tao’s Tofu

It seems like I’m always behind the times. It took me months and months to get around to making Julie Hasson’s seitan sausages. I was way behind the wagon when it came to making the chickpea cutlets. I STILL haven’t tried the seitan o’greatness. However, I can now scratch General Tao’s Tofu off my list of “famous vegan recipes that everyone in free world, except for me, has tried.”

Based on past reviews, I doubled the sauce recipe. Next time I think I would add a tbsp less of sugar, but oh well, it was still delicious. I added tons of veggies to it: red pepper, green pepper, carrots, tons of broccoli, and some nice fresh green onions. Served it over long grain white rice and there you have it. Even the bf loved it, and he usually refuses to eat tofu.
