My name is Carrie. I live in the middle of nowhere in Canada. I’m just finishing up my Ph.D. in psychology. I currently reside with my husband and my kitty cat Phantom. Neither of them are vegan but we all get along just fine.
The way I eat is highly influenced by Dr. Joel Fuhrman’s ‘Eat to Live.’ I highly recommend the book to anyone who is trying to live a healthier life. What this means is I eat a lot of produce as well as legumes and the occasional serving of tofu and/or grains. I keep added sugar, refined flour, and overt fats to a minimum (of course I do like the occasional treat every so often). I like to stay active by training for triathlons. Generally speaking, I feel at my best when I get in at least 60 minutes of activity a day, either biking, running, or swimming.
I wasn’t always this healthy. For nearly 10 years I was a very unhealthy vegetarian. I based my diet on a LOT of starch and cheese. I hated to cook and so I would eat a lot of instant food (instant mashed potatoes, frozen french fries, instant noodles, etc.). Not to mention I HATED to exercise, and let’s not forget the chain-smoking. But now I’m happy to report that I’m 50 lbs lighter and love being active. Here is a before and after shot:
Originally called vegetarian deliciousness, I started this blog in January, 2008. I became vegan 1.5 months later, mostly due to seeing vegan food blogs on the internet and realizing that being vegan was NOT that difficult. I could be vegan AND enjoy cooking and baking. And so the blog was renamed vegan deliciousness (hosted at blogspot). I honestly don’t know if I ever would have gone vegan without food blogs. The blog went on a long hiatus as I was swamped with getting married, finishing my Ph.D. and all of the joys that come along with applying for tons of jobs. Now I am back at it, ready to start blogging regularly.
